After running a simulation (Steady state), the output demand is different than the Modelling demand.
Why the output demand is different than the modelling demand?

If your demands in categories Demand1 through Demand10 have a pattern assigned, the demand used in steady state is still the base demand times the 1st pattern value. You could also have a global demand multiplier or default pattern assigned in the simulation options (demand tab) that could also be applied.

Check to see if either or both of those are being applied in your case.

If you desire your demands to only use the base demand (no pattern, then I would make a copy of your demand set and in the new copy convert all patterns to use a new pattern called "CONSTANT" with a single value of 1.0. Then just make sure there is no global demand multiplier and all demands should be equal to the base demand values entered in the Demand1 through Demand10 categories.

You can also check to make sure you don't have water flowing into a model reservoir (Note: not a tank) which could act like a system demand as water would be getting consumed.
